Fish Ceviche

To get 1 cup of fresh lime juice, you'll need at least 8 limes (more if they're small).

Ingredients

2 lb. mahimahi or any firm-fleshed white fish
1 cup fresh lime juice
1 garlic clove, crushed
Hot pepper sauce
Salt and freshly ground black pepper
1 large onion, finely chopped
2 red bell peppers, cut into strips
2 stalks celery, finely chopped
1 cup chopped cilantro

Preparation

1. Wash fish and cut into small cubes. Place in a glass bowl. Add lime juice, garlic, and pepper sauce, salt, and black pepper to taste. Let marinate 1 hour in refrigerator.

2. Add onion, bell peppers, celery, and cilantro. Let marinate 1 hour more. Serve chilled.
