We used a jar of Embasa sliced nopalitos, but you can use your favorite brand. You'll need about 28 ounces. This salad makes an excellent taco filling, too.
1 jar (28 oz.) sliced nopalitos
1 small onion, minced
2 tomatoes, peeled and diced, plus extra for garnish
2 tbsp. chopped cilantro, plus extra for garnish
1/4 cup olive oil
1 tbsp. fresh lemon juice
3 tbsp. white vinegar
2 tsp. dried oregano
1/2 cup crumbled feta cheese (about 2 oz.)
Salt and freshly ground black pepper
Hot peppers (optional)
1. Rinse and drain nopalitos. Coarsely chop them.
2. In a large salad bowl, combine nopalitos with onion, tomato, cilantro, oil, lemon juice, vinegar, oregano, feta, and salt and pepper to taste.
3. Garnish with tomato and cilantro and serve. Add hot peppers if desired.
