
Ensalada de Nochebuena

This colorful salad is traditional for Christmas Eve in parts of Mexico as well as the American Southwest.
Dressing
1/4 cup olive oil
3 tbsp. orange juice
2 tbsp. red wine vinegar
1 tbsp. chopped fresh cilantro
1 tsp. salt
Salad
1 head romaine lettuce, shredded
2 apples, peeled and sliced into thin wedges
2 oranges, separated into segments
2 bananas, sliced
1 cup fresh pineapple cubes
2 beets, cooked and cut into matchsticks
1/2 cup unsalted peanuts
1. Make the dressing: In a small bowl, whisk together oil, orange juice, vinegar, cialntro, and salt.
2. Make the salad: Arrange the lettuce on the bottom of a glass bowl and layer fruit and beets over it. You can toss the ingredients together if you wish, but it's not necessary. Top with peanuts and pour the dressing over the salad.
