Daily Bite: Arroz con Gandules

4 strips bacon
1/2 large onion, chopped
1 long Italian green pepper, diced
2 cloves garlic, minced
1 tsp. adobo
1 slice ham (1/2 in. thick), diced
1 tbsp. tomato paste
3 cups chicken broth
3 cups white rice
1 can (15 oz.) pigeon peas, rinsed and drained


In sauté pan, cook bacon, then remove and cut into small pieces. In same pan, add onion and pepper; sauté over medium heat until light brown, about 10 minutes. Add garlic and adobo; sauté 1 minute. Add ham and sauté 1 minute, then add tomato paste and cook 2 minutes. Add chicken broth and bring to boil. Add rice and salt, to taste; stir, then lower heat and simmer until most liquid is absorbed. Fold in pigeon peas, cover and cook over low heat about 15 minutes, until rice is cooked through and liquid is absorbed.
