1/2 chicken bouillon cube
1/2 green bell pepper, finely chopped
1 small onion, finely chopped
1/4 tsp. ground cumin
1/2 tsp. dried oregano
1 bay leaf
2 cans unseasoned black bean puree
1 tbsp. balsamic vinegar
1 tsp. sugar


1. In a medium saucepan, combine 1 cup water and bouillon cube and bring to a boil. Stir to dissolve the bouillon cube.

2. Add bell pepper, onion, cumin, oregano, and bay leaf. When onion softens, add 1 cup water. Add black bean puree and mix well. Cover and cook over low heat for 20 minutes. Stir in vinegar and sugar. Cover and cook 5 more minutes. Serve hot.
