DESCRIPTION:
Enjoy a Latin twist on the traditional BLT, with sauteed rounds of chorizo instead of bacon and an added smattering of onions.
INGREDIENTS:
Vegetable oil
1/2 cup thinly sliced hard-cured chorizo or other spicy sausage of your choice
1 or 2 onion slices
Mayonnaise
2 slices white bread, toasted
Iceberg lettuce
Sliced tomato
PREPARATION:
1. Add just enough oil to coat the bottom of a skillet and set over medium-high heat. Add the chorizo rounds and onions and cook, stirring, until the chorizo browns and curls slightly, about 1 minute. Drain on paper towels.
2. Spread mayonnaise on each slice of toast and top with lettuce, tomatoes, chorizo, and onion.
