Serve with rice, salsa, and warm tortillas.
2 tbsp. olive oil
Juice of 1 lime
2 tbsp. chopped cilantro
1 tsp. cumin
Salt and freshly ground black pepper
2 large boneless, skinless chicken breast halves, cut into 1-inch pieces
1 small zucchini, cut into 1/2-inch slices
1 onion, cut into wedges and separated
1 red bell pepper, cut into 1-inch pieces
10 cherry tomatoes
1. In a shallow dish, combine oil, lime juice, cilantro, cumin, and salt and pepper to taste. Add chicken and mix well. Cover and refrigerate at least 1 hour.
2. Preheat the grill to high. Thread chicken, zucchini, onion, bell pepper, and tomatoes onto skewers.
3. Brush grill with oil and arrange skewers on hot grate. Cook about 10 minutes, or until chicken is cooked through, turning to cook evenly.
