DESCRIPTION:
If you can't find whole red chiles, use 1/4 cup chile powder.
INGREDIENTS:
8 dried red chiles, seeded
1 garlic clove
1 lb. beef round steak, cut into 2-inch strips
1 1/2 tsp. salt
1 bay leaf
1/2 tsp. dried oregano
PREPARATION:
1. In a blender, combine chiles, garlic, and 2 cups water and blend to make a smooth puree.
2. Simmer meat with bone and fat in covered skillet for 20 minutes. Uncover, add salt, and cook until liquid evaporates and meat browns. Add chile puree, bay leaf, and oregano and continue to simmer for 25 minutes.
