Bistec Adobado

Sirloin is great for grilling because it is lean (no flare-ups) but has enough fat marlbed through it to still be nice and juicy. Serve with a simple side salad.

Juice of 1 lime
2 tablespoons chopped chipotle peppers in adobo sauce
1 tsp. minced garlic
1 tsp. dried oregano
1 tsp. ground cumin
2 lb. top sirloin steak
Salt and freshly ground black pepper


1. In a small bowl, combine lime juice, chipotle, garlic, oregano, and cumin. Taste for spice, and add some adobo sauce from can, as desired.

2. Pierce meat with a knife several times. Sprinkle with salt and black pepper to taste and place in a shallow nonmetal container. Pour the lime-chipotle mixture over meat, turning to coat evenly. Cover and marinate in refrigerator 1 to 2 hours.

3. Cook steak on an outdoor grill on high (lightly oil grates first) or indoors in a 375°F oven. Cook to your preferred doneness.
