Atole de Fruta

A typical atole is made with masa, but this creamy fruit drink is made with cornstarch instead.

Ingredients

2 tbsp. cornstarch
1/4 cup sugar
1 tsp. vanilla extract
1 cup fruit puree of choice, such as soursop, cherimoya, mamey, guava, or passion fruit
1 cup whole milk
2/3 cup cold water

Preparation

1. In a 1-quart saucepan, stir 2/3 cup water into cornstarch. Cook, whisking constantly, over medium-low hea.

2. Stir in sugar and vanilla. Then stir in fruit puree and milk until well blended. Keep  stirring until atole is frothy.
