Sweet apple enchiladas for dessert, and gild the lily with a scoop of vanilla, coffe, chocolate, or cinnamon ice cream.
1 1/3 cans (21 oz.) apple-pie filling
8 flour tortillas (8 inches)
1 tsp. cinnamon, plus more for sprinkling
1/2 tsp. nutmeg
1/2 tsp. allspice
1/4 cup plus 3 tbsp. margarine
2/3 cup granulated sugar
2/3 cup packed brown sugar
1/4 cup confectioners' sugar
1. Preheat the oven to 350°F. Lightly grease an 8 x 8-inch baking pan.
2. Spoon apple pie filling evenly onto each tortilla; sprinkle with 1 teaspoon cinnamon, the nutmeg, and allspice. Roll up tortillas with ends tucked in and place seam-side down in the baking pan.
3. In a medium saucepan, combine margarine, granulated sugar, brown sugar, and 2/3 cup water.. Bring to a boil then reduce to a simmer and cook, stirring constantly, for 3 minutes.
4. Pour the sauce evenly over the rolled up tortillas. Bake for 20 minutes. Sprinkle with cinnamon and thge confectioners' sugar.
