In Mexico, fresh fruit drinks are typical street food. If you've never had pineapple juice made from a fresh pineapple, you're in for a treat. (Note that the amount of sugar you need, and the yield, may vary with the size of the pineapple and its sweetness.)


1 ripe pineapple
About 1/2 cup sugar


1. Peel, core, and cut pineapple into smallish cubes. (Save some small, unpeeled pieces if you want to use as a garnish.)

2. In a blender, puree half the pineapple with 1/4 cup sugar and 1/4 cup cold water until frothy. Strain into a large glass pitcher through a fine-mesh sieve. Repeat the process with the remaining pineapple and another 1/4 cup sugar.

3. Add about 8 cups water and taste. Add more sugar, if desired, and mix well. Refrigerate for at least 3 hours, until well chilled.
