Pork loin is a relatively lean cut, but for an even leaner roast, make sure you get center-cut (the lighter colored portion of the loin).
2 lb. pork loin, trimmed of all visible fat
3 tbsp. fresh oregano, chopped
10 scallions, sliced
1 chipotle chile in adobo sauce, chopped
6 garlic cloves, crushed
2 limes, cut into wedges
1/2 cup cilantro, chopped
1. Place pork loin in a shallow dish. Cover with oregano, 4 scallions, the chipotle, and garlic. Cover and place in refrigerator for at least 1 hour.
2. Preheat grill or broiler for at least 15 minutes. Cook pork 25 to 30 minutes, turning periodically, until meat thermometer registers 160°F when inserted into center. Let pork rest about 5 minutes before slicing. Serve with lime wedges, remaining scallions, and cilantro.
